Mango Passion fruit smoothie – Mango, the king of fruits and the humble passion fruit in an explosive smoothie.
There are way too many mangoes lying around the house. I have this idea about storing mango pulp in bottles for the times when it is not available, but that can be done with the seasons last mangoes. I did a similar thing with passion fruit. I managed to get a kilogram of passion fruit recently. If kept as they were, it would rot. So I removed the pulp, and stored it in small portions in the freezer – as ice cubes and also as pulp/juice. Now I have passion fruit for any recipe, any time.
Thus it was to be when I saw a recipe for a mango passion fruit smoothie on the net, one I had bookmarked a long time ago during my ‘passion fruit’less days. With a hubby at home, kids at school and lots of time in hand, this recipe came back to life. This is a nice summer cooler, a very refreshing one. It was one easy drink to prepare. The smoothie perched pretty on my counter, the color so amazing. It disappeared in no time at all. However I must warn you that there is a definite tang to this smoothie. People who do not like the tartness of passion fruit should add it to taste. We love the tartness and we loved the smoothie.

MANGO PASSION FRUIT SMOOTHIEAdapted from eatingwell.com
- Mango – 1 big
- Yogurt – 170 gm
- Sugar – 3 Tbsp
- Passion fruit pulp – 1 fruit or passion fruit juice – 1/3 cup
- Cold Water – 2/3 cup
- Vanilla essence – 1/4 tsp (optional)
- Ice cubes – as needed

METHOD
- Cut the mango into small cubes and discard the seed.
- Put everything in the blender jar and whiz till combined.
- Strain the juice through a strainer to remove the black seeds.
- If you are using the passion fruit juice, you will not need all the water.
- Serve on ice cubes.
